Then, in 1935, his son Albert and his wife Geer made a name for themselves at the Hague Market with their smoked eel, which became wildly popular. Thanks to their craftsmanship and dedication, they built a strong reputation. Thus, Simonis became a household name in The Hague and the surrounding area. What once began as a small smokehouse grew into a well-known brand synonymous with craftsmanship and delicious fish. Ultimately, the Simonis family laid the foundation for the current restaurants.
